Kannauj, often called the Perfume Capital of India, is famous for its ancient tradition of making attars, or natural perfumes. This craft has been practiced for more than a thousand years and continues to use the same traditional methods that existed during the Mughal era. The skill has been passed down through generations, making Kannauj a living museum of Indian perfumery.

The heart of attar making lies in the deg-bhapka technique, an old hydro-distillation method. Fresh flowers, herbs, or natural materials are placed inside a copper vessel called the deg, which is sealed with clay and slowly heated. The aromatic vapors travel through a bamboo pipe into another container, the bhapka, filled with sandalwood oil. This oil absorbs the fragrance and serves as the base of the attar. The process is completely natural, uses no alcohol, and can take several days to several weeks.

Kannauj produces many famous attars, such as Ruh Gulab, Khus, Jasmine, and the unique Mitti Attar, which captures the scent of the first monsoon rain. After distillation, the attars are aged in camel-hide bottles, allowing the fragrance to mature and deepen over time.
